Carmel Mizrachi Goes Hi- Tech

by N. Katzin

A significant boon in the area of kashrus hiddurim has been effected in the Carmel Mizrachi wineries, as a result of the introduction of new equipment which, incidentally, places Carmel Mizrachi among the most advanced wineries in the world.

The modern equipment now in use at Carmel Mizrachi after an investment of millions of dollars, has transformed wine production there into a computerized, automatic process which requires absolutely no human contact.

The automation greatly facilitates the stringent, well known kashrus arrangements of Carmel Mizrachi, and as such has aroused much interest among rabbis involved in the kashrus of food enterprises in Israel. Upon their visits to the winery, they examined production procedures and were happy to note that both the grape juice and the wine are made solely from grapes, without any addition whatsoever of water, extracts or sugar. The rabbis therefore approved the use of this wine in the preparation of "egg matzos" (matzo ashira) for those who need to eat them since the liquids are thus pure fruit juice with no water added at any stage.

The rabbis noted further that at Carmel Mizrachi, even the pipes and vats are rinsed only by wine, in order to prevent any water residues.
