WHAT'S COOKING?
NO-MEAT BURGERS-IN-A-HURRY

INGREDIENTS:

1 lb. tofu, mashed

1 cup quick rolled oats

1/2 cup wheat germ

1 onion, minced

2 tablespoons soy sauce

1/2 teaspoon each: salt, basil, oregano, garlic powder

1/2 teaspoon black pepper

INSTRUCTIONS:

1. Mix ingredients together. Knead for a few minutes. Shape into six patties.

2. Bake on lightly oiled cookie sheet at 325 degrees F. for 25 minutes.

Serve on whole wheat bread or buns. Top with lettuce, tomato, alfalfa sprouts. Yield: 4 servings.

PUMPKIN KUGEL

INGREDIENTS:

1 1/2 cup flour, sifted

1 3/4 teaspoons baking powder

1 teaspoon salt

1/2 cup brown sugar

1 ripe banana, mashed

1 tart apple, peeled and minced

1 cup pureed pumpkin (1 lb. cooked and mashed: substitute squash)

1 egg

2 tablespoons oil

1 1/2 cup milk

non stick spray

INSTRUCTIONS:

Preheat oven to 350 degrees F. Lightly grease a 10 inch square baking pan. 2. Combine flour, baking powder, salt, brown sugar, banana, apple and pumpkin in a large bowl.

3. Beat egg with melted butter and milk in a separate bowl. Combine well with first mixture.

4. Bake for 40-50 minutes until golden. Cut into squares.
