Avocado Season

Did you know that avocados were one of the foods astronauts took along on their space flights? They are an invaluable source of unsaturated fats and are very high in protein and many minerals and vitamins. Avocados should never be cooked, however.

CHINESE STYLE AVOCADO SALAD

Ingredients:

6 small firm avocados

2 teaspoons lemon juice

1 diced scallion

1 chopped red pepper

Sauce:

2 tablespoons soy sauce

1 spoon oil

1 spoon orange juice

1/2 spoon sugar

1 spoon vinegar

1/4 spoon ginger

2 garlic cloves

salt, pepper to taste

Instructions:

Peel avocado and dice into 1 centimeter cubes. Drip lemon juice over, add red pepper and scallion. Mix gently.

In separate bowl, mix sauce ingredients and pour over avocado. Mix carefully so as not to mash the avocado. To your good health!
