What's Cooking?
Peanut-Butter Loaf

Just the thing for an after-school snack, especially when mated with that all-American favorite, peanut butter and jelly. And, by the way, did you ever try peanut butter and ketchup? Do. Note: this is dairy.

Ingredients:

1 3/4 cup flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup brown sugar

1/3 cup peanut butter (smooth or crunchy)

1 egg, beaten

1 regular container leben, unflavored yogurt or buttermilk

Instructions:

1. Preheat oven to 350 degrees F. Sift flour with baking soda and salt.

2. In a separate bowl, blend brown sugar and peanut butter. Add beaten egg and stir until smooth. Add flour mixture and leben alternately, beating well after each addition. Beat until smooth.

3. Pour batter into a greased 9x5x3 inch loaf pan. Bake for 1 hour or until tests done. Yield: one loaf of 12 slices.
