What's Cooking?

It's after Purim, and you've had plenty of eating to last for a while. How about this simple recipe, also good for the lean days ahead with time and effort at a premium.

Simply Vegetables and Rice
Combine vegetables and starch in one dish. This recipe uses one of my favorite ingredients: onion soup mix! Substitute mushroom soup mix [if you're trying to get rid of that] or parve `chicken soup' mix or even real chicken soup as part of the liquid.

INGREDIENTS:

1 cup uncooked long grain rice, checked

2 1/4 cups water

1 tablespoon onion soup mix

2 cups frozen corn, peas, string beans or mixed vegetables

salt, if necessary

INSTRUCTION:

1. Combine rice, water and soup mix in a medium saucepan. Bring to a boil over high heat.

2. Add vegetables and return to boil. Reduce heat to simmer, cover and cook for about 15 minutes or until rice and vegetables are tender. Taste to see if salt is needed. Yield: 6 servings.
